Corn Vegetable soup

Ingredients:


Corn                              : 1 
Onion                            : 1/2
Garlic                            : 1 clove
Carrot                            : 1 small
Beans                            : 6 nos
Tomato                          : 1 small
Melted butter                : 1 tsp
All purpose flour           : 1 tbsp
Milk                              : 1/2 cup
Salt to taste
Pepper pdr                     : 1/4 tsp
Spring onion for garnishing

Method:


Chop garlic and onion. Cut carrot, beans & tomato into small pieces.  Remove corn kernels from the corn with a sharp knife.
Heat butter in a pan, add chopped garlic and sauté for a few seconds. The add chopped onion and saute again.
Add flour to this and mix well. Then add the vegetables to that.



Sprinkle enough salt and add one cup of water. Let it boil for 2 minutes or till the vegetables become soft. 




 Then add the milk and stir it well. Boil it for a few seconds and remove from fire. 



Transfer into the serving bowl and sprinkle pepper pdr. Garnish with spring onion.

Ingredients:


Carrot                    : 2 no (medium size)
Butter                    : 1 tbsp
Onion                    : 1 small
Garlic                    : 2 cloves(optional)
Milk                      : 1/4 cup
Maida                    : 1 tbsp
Vegetables stock   : 1 cup
Cream                   : 1/2 cup
Salt & pepper to taste


Method:        


Chop onion and garlic finely. Cut carrot into cubes.
Heat butter and saute onion and garlic for one minute. Then add the maida to it saute till the raw smell goes. Then add the cubed carrots and vegetable stock and cook for a while till the carrots become tender. Cool it and puree it in a blender and return to heat, reduce the heat, add milk and cream to this. Stir it for a few minutes, add salt and pepper, mix well. Switch off the flame. Serve it hot!!

Ingredients:


Mushroom              : 300gms
Onion                     : 1/2
Garlic                     : 2 cloves
Cream                    :1/2 cup
Pepper powder      : 1/4 tsp
Butter                    : 1 tbsp 
Maida                    : 1 tbsp
Low fat milk         : 1 cup
Salt to taste

Method:


Slice mushroom into thin slices.




Heat butter in a pan and saute onion, garlic and mushroom for one minute and add flour to this and saute again till the raw smell goes.
Grind it in a blender and return to fire. Add milk to this and boil it in a low flame.  Finally add the cream to this and mix well, simmer for a minute and switch off the flame.  Sprinkle pepper powder and serve.


Peas & Celery Soup

Ingredients:


Peas                      : 1 cup
Celery                   : 1 stick
Onion                   : 1/4
Garlic                   : 1 clove
Cornflour             : 1 tsp
Milk                     : 1/4 cup
Butter                   : 1 tsp
Salt to taste
Pepper pdr           : 1/4 tsp
Cream                  : 2 tbsp


Method:

Chop onion, garlic and celery into small pieces. Saute it ialong with peas in butter  for 2 mins.





Add  1 cup water or  stalk to it and boil. Switch off the stove.  Grind it in a blender smoothly.  Return to fire and add salt.  Mix cornflour with milk, add this and boil it. Add cream to this and remove from fire and transfer it to the serving bowl. Garnish with cream and mint leaves. Sprinkle with pepper pdr and serve hot!

Vegetable noodles soup

Ingredients:



Noodles                  :1/2 pkt or 1 maggie noodle
Carrot                     : 1
Cauliflower            : 1/4
Onion                     : 1 small
Capsicum               : 1/2
Celery                    :1/2"pc
Garlic                     : 2 cloves
Butter                     : 1tbsp
Maida                     : 1tbsp
Milk                        : 2tbsp
Olive oil                 : 1tbsp
Salt to taste
Pepper pdr              : 1/2tsp


Method:



Dice carrots, capsicum and onion and cauliflower.
In a pan boil water and add the noodles,one tsp of oil and salt, let it cook till soft.
In another pan, heat oil add chopped garlic saute for a few seconds, add chopped celery and diced onion. When the onion is transparent add capsicum, carrot and cauliflower. Saute for a minute and add 3 -4 cups of water or vegetable stock to this. Let the veggies cook till soft.
Heat butter in a pan, add maida and fry this till a nice aroma comes out from this, remove from fire and add milk,  mix it without lumps. Add this to the cooked veggies.
Finally  add the cooked noodles to this and boil for another minute, remove from fire. Transfer to serving bowl add pepper pdr and serve hot!





Note: You can avoid butter if you don't want it, add corn flour to milk and add this to the soup to thicken.

Capsicum             : 1/2

Cauliflower         : 1/4
Zucchini              : 1/2
Onion                  : 1/2
Garlic                  : 2 cloves
Maida                  : 1tbsp
Butter                  : 1tsp
Milk                    : 2 tbsp
Corn flour           : 1/4 tsp
Salt to taste
Pepper powder    : 1/2 tsp


 Method:


Cut vegetables into small cubes.   
Heat butter in a pan and saute chopped garlic and onion. Add  maida and fry for a few sconds.Then add the diced vegetables and saute for a few seconds. Add  4 cups of water and salt, boil this  till the vegetables become tender.   Mix milk with corn flour and add this to the soup. Let it boil for a few seconds, the corn flour mixture will give some creamy thickness to the soup.
Transfer to a serving bowl add pepper powder and serve hot!

Ingredients:


Palak leaves                 : 1 bunch
Onion                           : 1onion
Garlic                           : 1 clove
Salt to taste
Cream                          : 1 tbsp
Milk                             : 2 tbsp
Corn flour                    : 1tsp
Butter                           : 1 tsp



Method:

Cut onion into small pieces.
Heat butter in kadai, add chopped onion. chopped garlic and saute. Add palak leaves and saute for 2 mins.
Add 2 cups of water and boil it for 3 mins. Remove from fire, cool it and blend it to a puree.




Mix corn flour with milk, return to fire and boil again for 2 mins.  Switch off the stove and add cream to this.  Serve it hot! Tasty palak soup is ready!

Ingredients:



Corn                       : 1
Onion                     : 1/4
Garlic                     : 1clove
Salt to taste
Corn flour              : 1tsp
Milk                       : 2 tbsp
Oil or butter           : 1 tbsp
Pepper pdr             : 1/2 tsp



Method:


Use a sharp knife to cut  the corn kernels from the corn.  Cut it close to the core to remove the kernels.
Heat  butter or oil in a tawa and add chopped garlic and chopped onion to this and saute for a while. Then add the corn kernels and saute again for 2 mins.



Add  2 cups water or vegetable stock to this and let it boil. Add salt and stir it well. Remove from fire, let it cool and blend it in a blender or mixie.
Return to fire, simmer it for a minute and mix corn flour to milk and add this to the soup and stir well. When it starts boiling remove from fire. Serve it hot sprinkling pepper powder.

Ingredients:

Cauliflower  florets               : 2cups
Cabbage                                : 1 cup(coarsely chopped)
Onion                                    : 1/2
Garlic                                    : 2 cloves
Maida                                    : 1 tbsp
Milk                                      : 1/2 cup
Salt to taste
Pepper powder                     : to sprinkle
Butter  melted                      : 1 tsp
Chicken stock cube              : 1


Method:


Wash and cook Cauliflower and cabbage with garlic, onion and salt in 1and a half cup of water.
Cool it and blend it to a puree and keep aside.
Heat butter  and add maida, fry it till the raw smell goes. Remove from fire and add milk, mix well without any lumps.
Mix the cauliflower puree with the milk and maida mixture, add the stock cube and boil  it in a reduced flame till it is thick and creamy. Sprinkle pepper powder and serve hot.

Ingredients:


Tomatoes                    : 5 nos
Onion                         : 1/2
Garlic                         : 2 cloves
Chicken stock            : 1 cube(optional)
Butter                         : 1 tsp
Maida                         : 1tbsp
Salt to taste
Pepper pdr                  : 1/4 tsp



Method:


Heat butter in a pan, add chopped onion and fry for 1 min. Add maida and fry it till the raw smell goes. In a pressure cooker add chopped tomatoes, fried onion and maida, garlic,salt and the stock cube with 2 cups of water and cook.
Cool it and puree it in a bender. Boil it again for 1 or 2 mins and remove from fire, sprinkle pepper powder. Serve it with fried bread pieces.

Ingredients:




Pumpkin                      :  1/2 kg
Onion                          : 1cubed
Garlic                          :  2 cloves
Salt to taste
Stock cube(optional)  : 1
Butter                         : 1/2 tsp
Maida                         : 1 tsp
Water as required





Method:


Cut pumpkin into medium pieces. Cook the pumpkin along with onion, garlic with required amt of water in a pressure cooker.
When it is cold puree it in a blender.
Heat butter in a pan, add maida and fry it till the raw smell goes. Then add the pumpkin puree and stock cube to this and let it boil for 2 mins in reduced flame. Remove from fire and serve it hot.

Ingredients:


Broccoli                     : 1
Maida                         : 2 tbsp
Butter                         : 1 tbsp
Cabbage grated          : 1 cup
Salt to taste
Pepper pdr                 : 1tsp
Water as required
Fresh cream               : 1 tbsp


Method:


Melt butter in a pressure pan and add grated cabbage and saute for 1 min. Then add the broccoli florets to this and saute again for 2 mins. Add maida to this and mix well till it changes its colour.  Add 2 cups of water or veg stock to this, add salt  and pressure cook it for 4 mins. Cool it and blend it in a blender. Pour it to the serving bowl and add fresh cream and sprinkle pepper powder.
