Ingredients:


Cauliflower                  : 1/2
Onion                           : 2
Green chillies               : 3
Capsicum                     : 1/2
Corn flour                    : 1tbsp
Soy sauce                     : 1tbsp
Chilli pdr                     : 1/2tsp
Ginger garlic paste      : 2tsp
Salt for taste
Oil  for frying

Method:



Seperate the florets of cauliflower, wash it in hot water.  Marinate it with 1tsp ginger garlic paste, salt, soy sauce, chilli pdr and mix with corn flour.
Dice half onion into cubes and chop the other half.
Heat oil in a kadai and fry the cauliflower till light brown.



  Keep it in a paper towel. In the same oil fry onion dices and capsicum lightly and remove from fire.
Heat one tablespoon of oil in a kadai and saute the chopped onion and ginger garlic paste. Then add the green chillies and soya sauce.




Mix with the fried cauliflower, onion and capsisum. Serve it hot!

Pasta sauce/ pizza sauce

Ingredients:


Tomatoes                   : 6 nos
Onion                        : 1
Garlic                        : 4nos
Bay leaf                    : 1
Green capsicum       : 1 small pc
Salt as needed
Sugar                        : a pinch
Tomato sauce           : 1 tbsp
Pepper powder         : 1 tsp
Olive oil                   : 4 tbsp


Method     


Chop garlic and onion finely.  
Boil water and put tomatoes in that for 2 mins. Then remove it and put it in cold water.  Remove the skin of the tomatoes and grind it in blender to make a puree.
 Heat oil in a kadai. Add bay leaf and chopped garlic, saute it for a while and add chopped  onion.




Saute it till transparent and the tomato puree to this. Add salt and pepper powder and  tomato sauce.



Mix well boil it in a reduced flame till the sauce becomes thick. Remove from fire and discard capsicum and bay leaf. 




 Prepare pasta and mix the sauce with it.  It can also use for pizza.

Schezwan sauce

Schezwan sauce  can be used for making schezwan fried rice, schezwan chicken or schezwan noodles. It can stored in refrigerator for about a week or 10days.





Ingredients: 

For the sauce:

Red chillies                   : 10 nos
Garlic cloves                 : 10nos
Ginger                           : 1/2"pc
Soya sauce                    : 1tbsp
Tomato ketchup            : 2tbsp
Salt to taste
Sugar                            :1 tsp
Oil                                : 2tbsp
Black pepper                : 1tsp
Vinigar                         : 1/4 cup


Method: 


Chop the garlic and ginger finely and keep aside.
Take the dry red chillies and remove the stalk. Take a pan boil this chillies with vinegar, If you want it less spicy remove the seeds of the chillies.




Simmer it for 5 mins. Then drain the chillies ( dont throw the vinegar, can use for grinding it) and adding little vinegar to this  grind it in a mixie to a paste.



 

Heat oil in a kadai and add the chopped garlic and ginger.Fry for a couple of mins and add the chilli paste to this.



Mix well, and add tomato ketchup, soya sauce, salt. pepper and sugar.  Mix it and simmer this for 5 mins.
Now the sauce is ready. Remove from fire and cool it.

Dahi chicken/yoghurt chicken

Dahi chicken or yoghurt chicken is a punjabi dish. I dont know much about this dish, but my daughter-in-law made this for me, I was just watching  and it's very easy and tasty too! Just try this!!


Ingredients:

Chicken boneless     : 1/2 kg
Yoghurt                    : 1 cup
Cinnamon                : 1"pc
Green chillies           : 2 nos
Onion                       : 1 big
Salt to taste
Kasoori methi           : 1 tbsp
Pepper powder          : 1tsp
Tomato                      : 1
Ginger garlic paste    : 1tsp
Oil/butter                   : 1tbsp
Coriander leaves       : for garnishing

Method:

Wash and cut the chicken into bite sized pieces.


Ground pepper and cinnamon into a powder. 
Chop onion, tomato. Crush ginger and garlic together.
Marinate chicken pieces with salt, ginger garlic paste,pepper and cinnamon powder and yoghurt  and keep it for 30mins.




Heat oil or butter in a kadai and add finely chopped onion. When it changes the colour add kasoori methi and fry for a minute.




 Then add the chicken along with the marination and mix it well.



Close and cook for about 5 minutes in a low flame. Stir it and add the chopped tomato.

Cook again till the gravy is thick. Transfer to the serving bowl and garnish with coriander leaves. 
Serve hot with rice or roti!


Palak soup

Ingredients:


Palak leaves                 : 1 bunch
Onion                           : 1onion
Garlic                           : 1 clove
Salt to taste
Cream                          : 1 tbsp
Milk                             : 2 tbsp
Corn flour                    : 1tsp
Butter                           : 1 tsp



Method:

Cut onion into small pieces.
Heat butter in kadai, add chopped onion. chopped garlic and saute. Add palak leaves and saute for 2 mins.
Add 2 cups of water and boil it for 3 mins. Remove from fire, cool it and blend it to a puree.




Mix corn flour with milk, return to fire and boil again for 2 mins.  Switch off the stove and add cream to this.  Serve it hot! Tasty palak soup is ready!
