Vegetable Manhcurian

Ingredients:

For making the balls


Capsicum (red and Green)       : 1/2 chopped finely
Spring onion bulb                    : 2 chopped
Carrot  small                            : 1 chopped finely
Beans                                       : 5 nos chopped
Cabbage  finely chopped         : 2 tbsp
Maida                                      : 2 tbsp
Cornflour                                 : 2 tbsp 
Ginger chopped                       : 1/2tsp
Garlic chopped                        : 1/2 tsp
Pepper powder                         : 1/4tsp
Salt as needed
Oil for frying


For the sauce:

Chopped ginger                      : 1 tsp
Chopped Garlic                      : 1tsp
Spring onion chopped            : 2 bulbs
Green chilli                            : 1 chopped
Tomato sauce                         : 2 tbsp
Soya sauce                             : 1 tbsp
Sugar                                      : a pinch
Corn flour                               : 1 tsp
Vegetable oil                          : 1 tbsp
Salt as needed
Spring onion for garnishing


Method:

In a bowl combine  maida and cornflour,  all the  chopped vegetables  along with garlic, ginger, pepper powder and salt together.  Sprinkle enough water to this mixture  and make small lemon sized balls. 



 
Heat oil in a frying pan and deep fry these vegetable balls  in a reduced flame till the they become golden brown. Remove it from fire and drain it in a paper towel.

Heat one tablespoon of oil, make it very hot and then add minced garlic, ginger and chopped green chilli fry it for a few seconds add the chopped spring onion, stir fry it for a minute and add the soya sauce and tomato sauce . Reduce the flame, mix 2 tbsp of water with corn flour  and add  this, mix well.  Add salt and sugar to this and finally the fried veg balls, cook for 2 mins and switch off the stove. 
Transfer it to a serving bowl and garnish with chopped spring onion!! Serve it hot with fried rice or noodles!!

Ingredients:

Egg                          : 1
Cooked rice             : 1 cup
Onion                       : 1/2 chopped
Carrot chopped        : 1tbsp
Capsicum chopped  : 1 tbsp
Ginger chopped       : 1tsp
Garlic                       : 1 clove chopped
Pepper pdr                : a pinch
Salt to taste
Oil                            : 2 tbsp
Soya sauce               : 1 tsp
Spring onion for garnishing


Method:


Heat one tbsp of oil in a pan and pour the beaten egg over it,  sprinkle little salt and pepper,  when it cooks just scramble it and keep aside.




Heat the remaining oil  add the chopped garlic and ginger, saute a while and add the chopped onion, saute it till transparent.  Now add the carrot and capsicum and saute for a few seconds, let it be crunchy, add the cooked rice and sprinkle very little salt, mix well. Finally add the scrambled egg, sprinkle the soya sauce over and mix it. Switch off the stove, transfer to the serving bowl. Garnish with spring onion and serve hot!!

Ingredients:


Baby corn               : 10pcs
Onion                      : 1 small
Capsicum                : 1/2
Corn flour               : 2tsp
Soya sauce              : 1tsp
Tomato sauce          : 1tsp
Spring onion           : 1
Green chillies          : 2nos
Sugar                       : a pinch
Chopped garlic       : 1tsp
Salt to taste
Ginger garlic paste : 1tsp
Oil                           : 2tbsp 
Pepper powder        : 1/4 tsp


Method:


Cut baby corn into 1 inch pieces. Marinate the corn pieces with ginger garlic paste, salt, half tsp soya sauce  and 1tsp of corn flour for 30 mins.
Cut onion and capsicum into cubes.
Heat oil in a kadai, fry the marinated corn pieces and keep aside.


In the remaining oil fry chopped garlic, add onion and capsicum and green chillies and saute it well. Add soya sauce, tomato sauce and then the fried corn pieces and pepper powder.  Mix remaining corn flour with little water and add this to the corn pieces.  Simmer it till  Sprinkle sugar over this. Cut spring onion into small pieces and garnish  with this.
  • You can slit  green chillies and garnish with that also.
