Hummus is a dip, which is smooth and creamy...it is a middle eastern dish. It goes well with lebanese roti, or with fresh veggies like carrots, cucumber or  celeries etc.... even we can have it with chips!!




Ingredients:



  • Chickpeas                     : 1 cup
  • White sesame seeds      :  1 tsp
  • Garlic cloves                 : 3 nos
  • Lemon juice                  : 1 tsp
  • Olive oil                        : 1 tbsp
  • Salt


Method:

  • Soak the chick peas and sesame seeds separately for minimum 6 hours. 
  • Cook the chick peas in a pressure cooker, I recommend to overcook the chickpeas, then it will be easy to grind to a smooth paste.
  • Then cool the chick peas and grind all the ingredients together to make a smooth paste.
  • Add cold water little by little while grinding  to make a smooth paste.
  • Transfer to a dish and drizzle one spoon of olive oil over it. This is a good dip for rotis, vegetables etc.

Ingredients:


  • 3 nos. Raw mangoes                     
  • 1 cup Chilli pdr 
  • 1/4 cup Mustard pdr  
  • 1/4 cup Fenugreek pdr 
  • 3/4 cup Rock salt powder
  • 1 1/4 cup Gingelly oil
  • 1/2 cup Garlic cloves

Method:

  • Wash and  wipe the mangoes with a clean cloth.
  • Cut the mangoes into medium small pieces.
  • Spread the mango pieces over a dry cloth.
  • Powder the rock salt and keep aside.
  • Keep the mustard seeds and fenugreek seeds  in sunshine and powder it, keep aside.
  • Mix kashmiri chillies and hot chillies together and grind it. 
  • Mix one cup chilli powder, mustard seed powder, fenugreek powder and rock salt powder together with 1/2 cup gingelly oil together and mix it together with mango pieces.
Take a clean jar and put the mango pieces mixed with spice powder and pour 1/4 cup oil over it. Tie a cloth over it and close with the lid. 



  • Don't open it for 3 days. 4th day open it and mix with a clean ladle and pour the balance oil over it and tie the cloth over it and close the lid. 
  • Open it after 4 days i.e.8th day you can start using the pickle.
  • Serve it with  curd rice or chappathi!

Vegetable pickle

Ingredients:


Carrot                       : 2
Potato big                 : 1
Beans                       : 10 nos
Raw mango             : 1
Lemon                     : 2
Green chillies           : 6
Turmeric pdr           : 1/4 tsp 
Kashmiri chilli pdr : 3 tbsp
hot chilli pdr           : 1 tbsp
Mustard seeds         : 1 tsp
Gingelly oil             : 3 tbsp
Hing                        : 1/2 tsp
Fenugreek seeds     : 1/2 tsp
Salt                          : 1/4 cup
Vinegar                   : 1 tbsp

Method: 

Cut the vegetables into thin one inch pieces. Slit green chillies lengthwise.  Cut lemon into quarters.
If you are making in bulk just dry the veggies in sun for one day.
Heat oil in a kadai, add 1/4 tsp of mustard seeds to this,   When it splutters remove from fire, when it is warm add both the chilli pdrs,  turmeric pdr and salt, mix well and add the vegetables to this, again mix it well.
Roast the fenugreek seeds and powder it. Crush the mustard seeds. Mix the fenugreek powder and crushed mustard seeds to the vegetables mixture and sprinkle vinegar over it.  
Keep it closed and you can use it after 3 days.

Ingredients:


Garlic                      : 2 bulbs
Chilli pdr                : 1 tbsp
Fenugreek seeds     : 1/4tsp
Asafoetida pdr        : 1/4 tsp
Sesame oil              : 3 tbsp
Salt to taste
Tamarind paste       : 1/4 tsp


Method:


Peel the garlic and if the pearls are big cut it lengthwise.
Fry the fenugreek seeds and powder it.
Heat oil in a kadai and fry the garlic pearls till light brown.




 Simmer the flame, drain the fried garlic .  Add the chilli pdr, fenugreek powder and asafoetida pdr. Mix it well and add the tamarind paste and salt, saute it for a few seconds and add the fried garlic and switch off the flame. Instead of tamarind paste you can add vinegar to this.



After cooling that transfer it to a dry container.

Ingredients:

Green apple            : 2nos
Chilli pdr                : 1tbsp
Gingelly oil            : 2tbsp
Mustard seeds        : 1/2tsp
Fenugreek seeds    : 1/4tsp
Asafoetida pdr       : 1/8tsp
Salt to taste


Method:



Cut green apple into small pieces, mix salt with it and keep aside.



Dry roast fenugreek seeds and powder it. Powder half of  mustard seeds also.
Heat oil in a kadai and add remaining mustard seeds. When it pops up switch off the stove.  When the oil is warm add chilli pdr, mustard pdr, fenugreek powder and asafoetida. Finally add the apple pieces to this and mix well.

Ingredients:


Long Green chillies                    : 6 nos
Tamarind                                    : big lemon size
Turmeric pdr                              : a pinch
Chilli pdr                                    : 1/2 tsp
Mustard seeds                            : 1/2 tsp
Sesame seeds                             : 1/4 tsp
Raw rice                                     : 1/2 tsp
Salt to taste
Oil                                              : 1 tbsp
Jaggery                                       : a small piece
Curry leaves                               : 1 sprig


Method:

Soak tamarind for 30 mins and extract the juice, keep aside.   Roast rice and sesame seeds in a kadai, powder it and keep aside.
Heat oil in a kadai add mustard seeds, when it splutters add green chillies and saute it for a while. Add the tamarind juice, salt , turmeric pdr and chilli pdr, let it boil for 5 mins. Add jaggery and powdered sesame seeds and boil again for 2 mins.  Add curry leaves and  remove from fire.

Ingredients:


Tomatoes                             :  1 kg
Gingelly oil                           : 3tbsp
Chilli pdr                             : 1tbsp
Turmeric powder                 : a pinch
Fenugreek seeds                 : 1/4tsp
Asafoetida powder              : 1/2tsp
Salt for taste
Garlic                                 : 6 cloves
Tamarind paste                   : 1/2tsp


Method: 

 

Soak tomatoes in boiled water and keep it for 30 mins, peel the skin and grind it in a mixie.  Fry the fenugreek seeds and powder it.
Heat gingelly oil in a kadai and add mustard seeds. When it splutters add garlic and fry till the colour changes. Remove from fire and add chilli pdr , mix well and return to fire and now add the tomato paste, tamarind paste, salt and turmeric powder  and cook in a low flame till the water absorbs fully. Now add the fenugreek powder and asafoetida powder and mix well. Remove from fire. Cool it and keep it in fridge. It goes well with rice, chappathi, dosa etc.

Ingredients: 


Raw mango               - 1 medium size
Kashmiri chilli pdr      - 2 tbsp
Fenugreek seeds        - 1/4 tsp
Asafoetida                 - a small piece(if it is powder 1/2 tsp)
salt to taste
Gingelly oil                - 2 tbsp
Mustard seeds          - 1/4
Red chillies               - 2 split into two
curry leaves


Method:


Cut Mango into fine pieces. Mix salt to this and keep aside. Fry fenugreek seeds and asafoetida(if it is powder just fry fenugeek seeds only)  and powder it.
Heat oil in a Kadai add mustard seeds and red chillies. When it splutters add curry leaves, remove from fire and add chilli pdr, mix it well. Then add the mango pieces to this. Finally add the fenugreek powder and asafoetida powder, mix well.  If it is too dry add a tbsp of warm water mix again.
