Pineapple Rasam

Ingredients:


  • 1 cup Pine apple  cubes 
  • 1/8 cup Tur dal
  • 1 medium Tomato
  • 1 tsp Rasam powder
  • 1/8 tsp Turmeric pdr
  • 1tsp Cumin seeds
  • 1 tsp Peppercorns
  • 5 garlic cloves
  • 1 tsp Mustard seeds
  • 2 Red chillies
  • A pinch of Asafoetida
  • Salt to taste
  • 1 Sprig Curry leaves
  • 1 Tsp oil
  • 1 tablespoon chopped coriander leaves

Method:


  • Cook tur dal in a pressure cooker adding 3/4 cup of water and turmeric pdr.  When cooked mash it and keep aside.
  • In a mortar crush the cumin seeds, pepper corns and garlic cloves coarsely and keep aside.
  • In a mixture add half of the pineapple pieces and grind it to a puree, keep aside.
  • Chop the tomato also and crush it in a blender.
  • Heat oil in a pot pan, add mustard seeds and let it crackle. Break the red chillies and add this. Then add the crushed pepper and garlic to this and fry it for a minute.
  • Then add the tomato paste and pineapple paste to this, saute this for 2 minutes.
  • Now add the cooked dal along with the water, boil for 3 mins.
  • Add the remaining pineapple cubes to this.
  • Add the rasam powder to this, season with salt.
  • Simmer it for 5 to 8 mins. 
  • Garnish with coriander leaves!

I have never tried coriander  rasam before. I was searching some new type of rasam, found this one from Yummy tummy Aarthi's blog.  Tried this one and it was really yummy! Thanks to Aarthi :)




Ingredients:


Coriander seeds               : 2 tbsp
Garlic cloves                    : 5 nos
Cumin seeds                    : 1tsp
Asafoetida                       : 1/4 tsp
Tomato                            : 1
Green chilli                     : 1 slit
Tamarind  paste               : 1 tsp
Chilli pdr                         : 1tsp
Pepper pdr                       : 1tsp
Salt to taste
Sugar                               : 1 tsp
Oil                                   : 1 tbsp
Coriander leaves chopped : 2 tbsp



Method: 

Crush coriander seeds and garlic in a mortar and pestle.
Heat oil in a kadai add jeera and asafoetida.  Now add the crushed coriander seeds and garlic to this and fry for one minute and add the chopped tomato to this. Add slit green chilli also.
When tomato pieces become mushy reduce flame and add chilli powder and pepper pdr sugar and salt to this.
Mix well add the tamarind paste, 2 to 3 cups of water and let it boil for 2 mins. Remove from fire add coriander leaves. Serve hot with steamed rice!! A different type of tasty rasam is ready!!

Ingredients:



Cooked tur dal            : 2tbsp
Tomato                        : 1
Tamarind                     : 1 small lemon size
Rasam powder            : 1tsp
Turmeric pdr               : 1/4 tsp
Salt to taste
Coriander leaves         : 1tbsp chopped

For seasoning:

Mustard seeds             : 1tsp
Cumin seeds                : a pinch
Red chilli                     : 1 break into 2
Ghee                            :1tsp
Garlic flakes                :2 or 3

Method:

Soak tamarind in 1 cup  of water for 30 mins and extract the juice from that.
When you cook tur dal for sambhar just remove 2 tablespoons of dal and keep aside.
Boil tamarind juice with salt, 1tsp of rasam powder ,turmeric pdr and 1 chopped tomato for 2 or 3 mins till the raw smell of tamarind goes.
Reduce the flame and  add the mashed tur dal. When it starts boiling froth will come on the top, switch off the stove.



Heat a tsp of ghee in a pan and add mustard seeds. When it pops add broken chilli and cumin seeds, finally add the garlic flakes till it changes the colour. Add this to the rasam. Garnish with chopped coriander leaves.

This is very simple to make and  very tasty . It goes well with hot steamed rice.  Since lemon is used, tamarind is  not needed in this recipe. 

Ingredients:

Toor dal                       : 1/4 cup
Tomato                        : 1
Green chillies              : 2 
Ginger                         : 1/4" pc
Turmeric pdr                : 1/4 tsp
Lemon                         : 1
Salt to taste
Coriander leaves
 chopped                     : 2 tbsp
Mustarrd seeds           : 1 tsp
Cumin seeds               : 1/4 tsp
Ghee                           : 1 tbsp





Method

Cook the dal in a pressure cooker adding 1 cup of water and keep aside.
Chop  the tomato and slit green chillies lengthwise and keep aside.




Take little ghee and add chopped tomato and green chillies. Add crushed ginger to this and saute for 2 min. Then mash the cooked dal slightly and add this. Add turmeric pdr, salt and 2 more cups f water, let it boil. When the froth starts coming on the top add chopped coriander leaves and remove from flame.



Heat  the balance ghee in a kadai  and  add mustard seeds, when it splutters add cumin seeds and pour this to the rasam.
Take out the juice from the lemon and add this to the rasam. Adjust the lemon juice for your taste. Delicious lemon rasam is ready!!

Ingredients:

Tamarind                            : 1 lemon sized ball
Pepper corns                      : 1 tsp
Cumin seeds                      : 1/2 tsp
Garlic                                 : 3 cloves
Turmeric pdr                      : a pinch
Salt to taste
Coriander leaves               : 2tbsp( chopped)

For seasoning
Ghee or oil                        : 1 tsp
Mustard seeds                   : 1/2 tsp
Red chilli                          : 1
Curry leaves                     : few


Method:

Soak tamarind in 1 cup of warm water for 10 mins and extract the juice. Otherwise you can add tamarind as such in 2 cups of water and boil for this rasam only.
Grind or crush the pepper corns, cumin seeds and garlic together (dont grind it finely).
Take a pan, boil tamarind with salt, turmeric pdr for 5 mins. Then reduce the flame and add the crushed pepper corn cumin garlic mix.  After adding this mix just boil it till a froth comes on top of the rasam.  Remove from fire.
Heat ghee and add mustard seeds, red chilli. When it pops add curry leaves and pour it over the rasam. Add chopped coriander leaves.
You can have it with steamed rice and pappad.

Tomato rasam (Thakkali rasam)

Ingredients:


Tomatoes                      : 3 medium size
Tur dal                          : 2 tbsp
Tamarind                      : small lemon size
Chilli pdr                      : 1tsp
Coriander pdr               : 1tsp                 
Turmeric pdr                : a pinch
Jaggery                        : a small piece
Ghee                            : 1tsp
Mustard seeds              : 1tsp
Cumin seeds                : a pinch
Asafoetida powder       : a pinch
Red chillies                  : 2 split into 2
Coriander leaves          : for garnishing


Method:


Pressure cook tur dal ( When you cook tur dal for sambhar, just take 2 tbsps of cooked dal along with  water). Mash 1 tomato and and mix it with the dal and keep aside.

Soak tamarind  in 3 cups of water for 30 mins and take the extract. Now add  chopped tomatoes(2),salt, turmeric pdr, chilli pdr, coriander pdr,  asafoetida and jaggery  to this and let it boil for 5 mins.   Finally add the dal and tomato mix to this and boil for 1 more min and remove from fire.  Heat ghee in a kadai and mustard seeds, red chillies and cumin seeds. when it splutters add this to the rasam and garnish with coriander leaves.
